I found this at a Memphis bar over the weekend. I made a few changes (add more booze) to perfect it !
Add peach, ginger, lemon, and mint to a shaker tin. Lightly muddle mint. Add bourbon. Shake + Strain!
Garnish with a ton of mint and three peach slices.
peach syrup: I used a vitamix 5200. I cut up about 5 peaches and tossed them in a vitamix with 5 tablespoons of sugar, 1/2 oz lemon juice, and 1 cup of water. I slowly started from low to high, and then let it sit on high for a minute. Then I added it to warm simple syrup. its a 1:1 recipe. I added two cups of peach puree to two cups of simple syrup and let it steam.
ginger syrup: buy some ginger. shave that ginger completely naked. I feel a spoon works best. Add one handful of cut up ginger per one cup of simple. You want your ginger to be a little hotter than steam. It should lightly bubble but not completely boiling. I think I had my stove on level 5 and it was perfect for the ginger syrup to keep the ginger moving around. Let it dance for about 30 minutes in the hot syrup. Strain and BOOM! You're done.
